Ingredients
Scale
- 1/2 cup ketchup
- 1/4 cup red wine vinegar
- 1/4 cup extra-virgin olive oil
- 1/4 cup water
- 4 ounces Coca-Cola
- 1/2 tablespoon Worcestershire sauce
- 1/2 tablespoon garlic powder
- 1/2 tablespoon oregano
- 1 3/4 teaspoon Diamond Crystal Kosher Salt (or 1 teaspoon Morton Kosher Salt)
- 1/2 teaspoon black pepper
- 2 pounds steak tips (sirloin tips), cut into 2-inch pieces
- Canola oil, for searing
- 2 tablespoons finely minced parsley, for serving (optional)
- 4 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 1 tablespoon fresh herbs (mix of rosemary, thyme, and parsley), finely chopped
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- In a large bowl, whisk together ketchup, red wine vinegar, olive oil, water, Coca-Cola, Worcestershire sauce, garlic powder, oregano, kosher salt, and black pepper until well combined.
- Add the steak tips to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
- While the steak is marinating, mix the softened butter with minced garlic, chopped herbs, salt, and pepper in a small bowl. Cover and refrigerate until ready to use.
- Remove steak from the marinade and pat dry with paper towels. Heat a large cast-iron skillet over high heat and add just enough canola oil to coat the bottom. When the oil is shimmering hot, add the steak tips in a single layer, working in batches if needed to avoid overcrowding.
- Cook the steak tips for 2-3 minutes on each side for medium-rare, or adjust cooking time to your preferred doneness.
- Once the steak tips reach your desired doneness, reduce heat to medium-low, return all the steak to the pan if working in batches, and add the garlic herb butter. As the butter melts, spoon it over the steak tips, continuing to cook for another minute as the flavors meld together.
- Transfer the Steak Tips with Garlic Butter and Herbs to a serving plate, pour any remaining butter sauce over the top, and let rest for 5 minutes. Garnish with additional fresh minced parsley if desired before serving.
Notes
- Room temperature meat cooks more evenly: Remove the steak from the refrigerator about 30 minutes before cooking.
- Store leftovers in an airtight container for up to 3 days.
- Experiment with different herb blends to customize the flavor.
