Ingredients
Scale
- 3 1/2 cups desiccated coconut
- 1 cup icing sugar (powdered sugar)
- 395g sweetened condensed milk
- Pink food coloring (a few drops)
- Green food coloring (a few drops)
- 150g Arnott’s Marie biscuits (or any plain tea biscuits)
- 50g butter, melted
- 3 tablespoons condensed milk (extra)
- 200g dark chocolate
- 1 tablespoon coconut oil
- 1 packet licorice allsorts, chopped (for decoration)
Instructions
- Line a 20cm x 20cm (8″ x 8″) square baking tin with baking paper, leaving some overhang for easy removal later.
- In a food processor, crush the Marie biscuits until they resemble fine crumbs. Alternatively, crush them in a sealed plastic bag using a rolling pin.
- In a bowl, combine the crushed biscuits with melted butter and 3 tablespoons of condensed milk. Mix until well combined and press into the base of the prepared tin.
- Refrigerate to firm while preparing the coconut layer.
- In a large bowl, mix the desiccated coconut, icing sugar, and 395g of condensed milk until well combined.
- Divide the coconut mixture into three portions. Leave one white, add pink food coloring to the second, and green to the third. Mix until colors are distributed evenly.
- Remove the tin from the refrigerator. Layer the colored coconut mixtures on top of the biscuit base, either in distinct layers or swirled together.
- Press down firmly on the coconut layer to compact it and refrigerate for at least 30 minutes.
- Melt the dark chocolate and coconut oil in a microwave-safe bowl, in 30-second intervals, stirring until smooth.
- Pour melted chocolate over the coconut layer and evenly spread.
- Sprinkle chopped licorice allsorts over the chocolate, pressing them in slightly.
- Refrigerate for 2-3 hours or until set.
Notes
- For a gluten-free version, replace Marie biscuits with gluten-free plain cookies.
- Add 1/2 cup chopped nuts for added texture.
- The slice lasts up to 7 days in the fridge when stored in an airtight container.
