A delicious low-carb panna cotta recipe featuring mascarpone cheese, perfect for a sweet treat without the carbs.
Ingredients

- 2 cups heavy cream
- 1 cup mascarpone cheese
- 1/4 cup erythritol (or preferred low-carb sweetener)
- 1 teaspoon vanilla extract
- 1 packet gelatin (2 1/2 teaspoons)
- 3 tablespoons cold water
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- In a saucepan, combine the heavy cream, mascarpone cheese, erythritol, and vanilla extract. Heat over medium heat, stirring continuously until the mixture is well combined and smooth. Do not let it boil.
- Once the cream mixture is warm, remove it from the heat. Add the bloomed gelatin to the mixture and stir until fully dissolved.
- Pour the panna cotta mixture into individual serving cups or ramekins.
- Chill in the refrigerator for at least 4 hours or until set.
- Once set, serve chilled and enjoy your delicious low-carb panna cotta.
Notes
- Make sure not to boil the cream mixture to avoid curdling.
- This panna cotta can be topped with fresh berries for added flavor.
