Ingredients

  • 2 cups heavy cream
  • 1 cup mascarpone cheese
  • 1/4 cup erythritol (or preferred low-carb sweetener)
  • 1 teaspoon vanilla extract
  • 1 packet gelatin (2 1/2 teaspoons)
  • 3 tablespoons cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  2. In a saucepan, combine the heavy cream, mascarpone cheese, erythritol, and vanilla extract. Heat over medium heat, stirring continuously until the mixture is well combined and smooth. Do not let it boil.
  3. Once the cream mixture is warm, remove it from the heat. Add the bloomed gelatin to the mixture and stir until fully dissolved.
  4. Pour the panna cotta mixture into individual serving cups or ramekins.
  5. Chill in the refrigerator for at least 4 hours or until set.
  6. Once set, serve chilled and enjoy your delicious low-carb panna cotta.
