A delicious and creamy low-carb fudge made with cream cheese and cocoa powder, sweetened with erythritol.

- 8 oz cream cheese, softened
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated erythritol (or your favorite low-carb sweetener)
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the softened cream cheese and melted butter. Beat them together until smooth and creamy.
- Add the erythritol, cocoa powder, vanilla extract, and salt to the bowl. Mix until all ingredients are well combined and the mixture is smooth.
- Line an 8×8 inch square baking dish with parchment paper, allowing some overhang for easy removal.
- Pour the fudge mixture into the prepared baking dish, spreading it evenly with a spatula.
- Refrigerate the fudge for at least 2 hours, or until firm.
- Once set, lift the fudge out of the baking dish using the parchment paper. Cut into squares.
- Serve immediately or store in an airtight container in the refrigerator.
