Description

A delicious and comforting low-carb version of chicken and dumplings, perfect for keto diets.


Ingredients

  • 1 pound chicken breast, cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 2 tablespoons butter
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, add the cubed chicken breast, chicken broth, heavy cream, garlic powder, onion powder, salt, and pepper. Bring to a boil over medium heat.
  2. Reduce heat to low and let simmer for about 15 minutes, stirring occasionally, until the chicken is cooked through.
  3. Meanwhile, in a mixing bowl, combine almond flour and baking powder. Mix well.
  4. In a separate bowl, whisk together the eggs and melted butter.
  5. Add the egg mixture to the almond flour mixture and stir until a dough forms.
  6. Drop spoonfuls of the dough into the simmering chicken and broth mixture.
  7. Cover the pot and let the dumplings cook for another 10-12 minutes, or until they are cooked through and fluffy.
  8. Remove from heat, garnish with fresh parsley, and serve hot.
