- 1 pound chicken breast, cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup almond flour
- 1 teaspoon baking powder
- 2 large eggs
- 2 tablespoons butter
- Fresh parsley, for garnish
Instructions
- In a large pot, add the cubed chicken breast, chicken broth, heavy cream, garlic powder, onion powder, salt, and pepper. Bring to a boil over medium heat.
- Reduce heat to low and let simmer for about 15 minutes, stirring occasionally, until the chicken is cooked through.
- Meanwhile, in a mixing bowl, combine almond flour and baking powder. Mix well.
- In a separate bowl, whisk together the eggs and melted butter.
- Add the egg mixture to the almond flour mixture and stir until a dough forms.
- Drop spoonfuls of the dough into the simmering chicken and broth mixture.
- Cover the pot and let the dumplings cook for another 10-12 minutes, or until they are cooked through and fluffy.
- Remove from heat, garnish with fresh parsley, and serve hot.
Notes
- Make sure to use gluten-free chicken broth for a completely gluten-free dish.
- You can adjust seasoning according to your taste preference.
