  • 4 (6 ounce) halibut fillets (about 1-inch thick)
  • 1 lime, cut into wedges for serving
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil (for brushing the grill)
  • 3 cloves garlic, coarsely chopped
  • ½ cup fresh cilantro, finely chopped
  • 1 tablespoon fresh lime juice
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, combine the chopped garlic, cilantro, lime juice, softened butter, and olive oil. Mix thoroughly until all ingredients are well incorporated. Set aside at room temperature while you prepare the fish. If making ahead, refrigerate and bring to room temperature before using.
  2. Preheat your grill to medium-high heat (approximately 400°F to 450°F). Clean the grill grates thoroughly and oil them using a paper towel dipped in olive oil to prevent sticking.
  3. Pat the halibut fillets dry with paper towels to remove excess moisture. Season both sides generously with salt and freshly ground black pepper. Allow the fish to rest at room temperature for 5-10 minutes before grilling.
  4. Place the halibut fillets on the preheated grill, skin side down if your fillets have skin. Grill for approximately 4-5 minutes without moving them to get nice grill marks and prevent sticking. Carefully flip the fillets using a wide, flat spatula. Grill for another 3-4 minutes or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 130°F to 135°F for perfect doneness.
  5. Transfer the grilled halibut to a serving platter. Immediately top each fillet with a generous dollop of the cilantro garlic butter. Allow the butter to melt over the hot fish, creating a luxurious sauce. Garnish with lime wedges and additional chopped cilantro if desired.

Notes

  • If halibut isn’t available, you can substitute with other firm white fish like cod, sea bass, or mahi-mahi.
  • For a dairy-free version, use a plant-based butter or additional olive oil.
  • The cilantro garlic butter can be made up to 3 days in advance and stored in the refrigerator, or frozen for up to a month.
