Description
This Garlic Steak with Garlic recipe offers a double dose of fragrant, savory garlic, transforming an ordinary beef cut into an extraordinary meal. Roasted garlic cloves blend with perfectly seared steak to create a restaurant-quality dining experience in your kitchen.
Ingredients
Scale
- 8 cloves garlic, minced (for marinade)
- 1 tablespoon olive oil
- Salt and ground black pepper to taste
- 2 (12 ounce) New York strip steaks (substitute ribeye or sirloin if preferred)
- 12 cloves garlic, peeled and kept whole (for frying)
- 1 cup olive oil for frying garlic
- 1½ tablespoons balsamic vinegar
Instructions
- In a small bowl, combine the 8 minced garlic cloves with 1 tablespoon olive oil, salt, and pepper.
- Pat the steaks dry with paper towels to help the marinade adhere better. Rub the garlic mixture thoroughly on both sides of the steaks, pressing gently to help it stick. Place the steaks in a shallow dish, cover, and refrigerate for at least 30 minutes (or up to 2 hours for more intense flavor).
- While the steak marinates, heat 1 cup of olive oil in a small saucepan over medium-low heat. Add the 12 whole garlic cloves to the oil. Fry the garlic gently for 15-20 minutes, or until they turn golden brown and soft. Using a slotted spoon, transfer the fried garlic to a paper towel-lined plate to drain. Save the garlic-infused oil for later use.
- Remove the steaks from the refrigerator 20 minutes before cooking to allow them to come to room temperature. Heat a cast-iron skillet over high heat until very hot (about 5 minutes). Carefully place the steaks in the hot pan and cook for 3-4 minutes without moving them (for medium-rare). Flip the steaks and cook for an additional 3-4 minutes on the second side. Remove the steaks from the pan and let them rest on a cutting board for 5-10 minutes.
- While the steaks are resting, return the skillet to medium heat. Add 2 tablespoons of the reserved garlic-infused oil to the pan. Add the fried garlic cloves and balsamic vinegar, stirring to combine with the steak drippings. Simmer the mixture for 1-2 minutes until slightly thickened.
- Slice the steaks against the grain into ½-inch thick slices. Arrange the steak slices on warm plates. Spoon the balsamic garlic sauce over the steak. Distribute the fried garlic cloves around and on top of the steak.
Notes
- For a leaner option, use top sirloin instead of New York strip. Fresh garlic is essential – pre-minced jarred garlic won’t deliver the same flavor.
- The secret to perfect garlic steak with creamy garlic sauce is not to overcook the garlic; it should be golden, not brown.
