Ingredients

  • 1/4 cup panko breadcrumbs
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine ground chicken, panko breadcrumbs, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, ground ginger, and red pepper flakes.
  3. Season the mixture with salt and pepper, then add chopped cilantro, mixing everything thoroughly until well incorporated.
  4. Transfer the chicken mixture into the prepared loaf pan, pressing it down gently to shape it evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
  6. While the loaf is baking, prepare the peanut sauce by mixing 1/4 cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon lime juice, and 1 tablespoon water in a small bowl until smooth.
  7. Remove the loaf from the oven, let it cool for a few minutes before slicing.
  8. Serve the Chicken Satay Loaf with the prepared peanut sauce drizzled over the top or on the side.
