- 1/4 cup panko breadcrumbs
- 2 tablespoons peanut butter
- 2 tablespoons soy sauce

- 1 tablespoon brown sugar

- 1/2 teaspoon red pepper flakes
- 1/4 cup chopped cilantro

Instructions
- Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
- In a large mixing bowl, combine ground chicken, panko breadcrumbs, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, ground ginger, and red pepper flakes.
- Season the mixture with salt and pepper, then add chopped cilantro, mixing everything thoroughly until well incorporated.
- Transfer the chicken mixture into the prepared loaf pan, pressing it down gently to shape it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
- While the loaf is baking, prepare the peanut sauce by mixing 1/4 cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon lime juice, and 1 tablespoon water in a small bowl until smooth.
- Remove the loaf from the oven, let it cool for a few minutes before slicing.
- Serve the Chicken Satay Loaf with the prepared peanut sauce drizzled over the top or on the side.
