- 2 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 1 tablespoon honey, plus extra for drizzling
- 1 teaspoon fresh rosemary, minced
- Kosher salt and black pepper, to taste
- 24 oz salmon fillets (4 pieces, skinless)
- 1 large lemon, thinly sliced
Instructions
Step1: Preheat your oven to 400°F. Arrange sweet potato slices on a sheet pan, drizzle with olive oil, and sprinkle rosemary, salt, and pepper. Toss until evenly coated, then spread in a single layer. Bake for 12 minutes.
Step2: Prepare the butter mixture by combining softened butter, garlic, honey, rosemary, salt, and pepper in a bowl. Season the salmon fillets lightly with salt and pepper.
Step3: Remove the sheet pan from the oven. Place salmon fillets on top of the sweet potatoes. Spread the butter mixture evenly over the salmon. Lay lemon slices on top of each fillet.
Step4: Return the pan to the oven and bake for 10–15 minutes, checking for doneness at 10 minutes. The salmon should be opaque and flake easily with a fork.
Step5: Lightly drizzle honey over the salmon and sweet potatoes before serving.
