- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup melted butter
- 1 large egg
- 1 cup cooked and seasoned ground beef (or filling of choice)
- 1/2 cup shredded cheese (optional)
- 1 tablespoon chopped fresh herbs (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the almond flour, coconut flour, salt, and baking powder until well combined.
- Add the melted butter and egg to the dry ingredients, mixing until a dough forms.
- Divide the dough into small balls (about the size of a golf ball) and flatten each ball into a disc.
- Place a spoonful of the cooked ground beef filling in the center of each disc.
- If desired, add shredded cheese and fresh herbs over the filling.
- Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal securely.
- Place the empanadas on a parchment-lined baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow to cool slightly before serving.

- These empanadas are a great low-carb snack or meal option.
- Feel free to use any filling of your choice instead of ground beef.
