Description

Baked Keto Empanadas are a delightful low-carb treat perfect for any meal or snack, filled with cooked ground beef and optional cheese and herbs.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup melted butter
  • 1 large egg
  • 1 cup cooked and seasoned ground beef (or filling of choice)
  • 1/2 cup shredded cheese (optional)
  • 1 tablespoon chopped fresh herbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, coconut flour, salt, and baking powder until well combined.
  3. Add the melted butter and egg to the dry ingredients, mixing until a dough forms.
  4. Divide the dough into small balls (about the size of a golf ball) and flatten each ball into a disc.
  5. Place a spoonful of the cooked ground beef filling in the center of each disc.
  6. If desired, add shredded cheese and fresh herbs over the filling.
  7. Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal securely.
  8. Place the empanadas on a parchment-lined baking sheet.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  10. Allow to cool slightly before serving.
