Ingredients

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 ¼ teaspoons baking powder
  • 1 ¼ teaspoons salt
  • â…ž cup boiling water
  • 4 teaspoons vegetable oil
  • 3 tablespoons honey
  • 3 tablespoons molasses
  • 1 tablespoon butter, melted (optional)

Instructions

  1. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, and salt until well combined.
  2. In a separate medium bowl, mix the boiling water, vegetable oil, honey, and molasses. Stir until the sweeteners are fully dissolved in the hot water.
  3. Make a well in the center of the dry ingredients and pour in the liquid mixture.
  4. Stir with a wooden spoon until the dough comes together and becomes too stiff to stir.
  5. Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  6. Divide the dough into 16 equal portions and roll each into a ball.
  7. Cover the dough balls with a clean kitchen towel and let rest for 10 minutes.
  8. Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat.
  9. Roll each dough ball into a thin circle, approximately 6-7 inches in diameter.
  10. Cook each flatbread for 1-2 minutes per side until bubbles form and brown spots appear.
  11. If desired, brush the hot flatbreads with melted butter for extra richness.
  12. Stack cooked flatbreads and keep covered with a towel to keep warm and soft.

Notes

  • Using boiling water partially cooks the flour, resulting in a tender flatbread.
  • Store cooled flatbreads in an airtight container with parchment paper between each piece.
  • Flatbreads can be frozen and reheated in a skillet or microwave.
