- 6 tablespoons brewed coffee (can use water instead)
- 2 cups vegan chocolate chips, divided
- 1 cup coconut sugar (or brown sugar)
- 6 tablespoons vegan butter
- 1 teaspoon vanilla extract
- 3/4 cup + 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup cocoa powder
Instructions
- In a small bowl, mix the ground flaxseed with the brewed coffee (or water). Let the mixture sit for about 5 minutes until it becomes gel-like in consistency.
- Reserve 1/2 cup of chocolate chips for topping later. In a microwave-safe bowl, combine the vegan butter and the remaining 1 1/2 cups of chocolate chips. Microwave in 30-second intervals, stirring between each until fully melted and smooth.
- Add the coconut sugar to the melted chocolate mixture and stir until well combined. Mix in the flax egg and vanilla extract, stirring until the batter is smooth.
- In a separate bowl, whisk together the flour, salt, baking powder, and cocoa powder. Gradually add the dry ingredients to the chocolate mixture, stirring until just combined.
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. Pour the brownie batter into the prepared pan, spreading it evenly, and sprinkle the reserved chocolate chips on top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Notes
- Don’t overbake: The secret to fudgy Vegan Brownies is taking them out when they still seem slightly underdone. They’ll continue to set as they cool.
- Enhance the flavor by adding 1/2 teaspoon of espresso powder to intensify the chocolate flavor.
