Description

Rich and fudgy vegan brownies that are perfect for any occasion. These plant-based brownies have a chewy texture and enhanced chocolate flavor thanks to coffee and flaxseed.


Ingredients

Scale
  • 2 tablespoons ground flaxseed
  • 6 tablespoons brewed coffee (can use water instead)
  • 2 cups vegan chocolate chips, divided
  • 1 cup coconut sugar (or brown sugar)
  • 6 tablespoons vegan butter
  • 1 teaspoon vanilla extract
  • 3/4 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder

Instructions

  1. In a small bowl, mix the ground flaxseed with the brewed coffee (or water). Let the mixture sit for about 5 minutes until it becomes gel-like in consistency.
  2. Reserve 1/2 cup of chocolate chips for topping later. In a microwave-safe bowl, combine the vegan butter and the remaining 1 1/2 cups of chocolate chips. Microwave in 30-second intervals, stirring between each until fully melted and smooth.
  3. Add the coconut sugar to the melted chocolate mixture and stir until well combined. Mix in the flax egg and vanilla extract, stirring until the batter is smooth.
  4. In a separate bowl, whisk together the flour, salt, baking powder, and cocoa powder. Gradually add the dry ingredients to the chocolate mixture, stirring until just combined.
  5. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. Pour the brownie batter into the prepared pan, spreading it evenly, and sprinkle the reserved chocolate chips on top.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Notes

  • Don’t overbake: The secret to fudgy Vegan Brownies is taking them out when they still seem slightly underdone. They’ll continue to set as they cool.
  • Enhance the flavor by adding 1/2 teaspoon of espresso powder to intensify the chocolate flavor.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. These brownies freeze well for up to 3 months.
