Description

This Vegan Potato Salad is a creamy, tangy, and herb-packed dish perfect for gatherings, easy weeknight dinners, or summer barbecues. With a delightful contrast of textures, it will transport you to picnic paradise.


Ingredients

  • 2 pounds Yukon Gold Potatoes, cubed (or red potatoes for a firmer texture)
  • 1 cup Vegan Mayonnaise
  • 1 tbsp Dijon Mustard
  • 1 tbsp Apple Cider Vinegar
  • 1/2 cup Relish (sweet or dill, depending on preference)
  • 1/3 cup Red Onion, thinly sliced
  • 1/2 cup Corn Kernels (fresh or frozen)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Ground Black Pepper
  • 2 tbsp Fresh herbs (dill, parsley, or chives, finely chopped)

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.
  2. Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook potatoes for 12-15 minutes or until fork-tender but not mushy.
  3. Drain potatoes thoroughly in a colander, then transfer to a large bowl. Let potatoes cool for about 10 minutes.
  4. While potatoes are cooling, whisk together vegan mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, and onion powder in a medium bowl until smooth and well combined.
  5. Taste and adjust seasoning with salt and pepper.
  6. Add sliced red onion, corn kernels, and relish to the cooled potatoes.
  7. Pour the dressing over the potato mixture and gently fold everything together.
  8. Fold in fresh herbs, saving some for garnish.
  9. Cover and refrigerate for at least 30 minutes or up to overnight to allow flavors to meld.

Notes

  • For better texture, dress potatoes while they’re still slightly warm.
  • Store in an airtight container for up to 5 days.
