Ingredients
Scale
- 1 lb ground chicken (preferably organic)
- 1 medium sweet potato, peeled and grated (about 1 cup)
- 2 tbsp coconut flour
- 2 tbsp coconut oil, plus more for cooking
- 1 tbsp fresh parsley, finely chopped
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp sea salt
- ½ tsp dried sage
- ½ tsp dried rosemary
- Optional: ¼ tsp black pepper (omit for strict AIP)
- Fresh herbs for garnish
- AIP-friendly dipping sauce of choice
Instructions
- Peel the sweet potato and grate it using a box grater or food processor. You’ll need about 1 cup of grated sweet potato. Place the grated sweet potato in a clean kitchen towel and squeeze out any excess moisture.
- In a large mixing bowl, combine the ground chicken, grated sweet potato, coconut flour, coconut oil, minced garlic, chopped parsley, and all the seasonings. Mix thoroughly until fully incorporated.
- Form the mixture into small balls using approximately 2 tablespoons per popper, then gently flatten each into a 1-inch thick disc.
- Heat a large skillet over medium heat and add enough coconut oil to coat the bottom. Once hot, cook the poppers in a single layer (in batches if needed) for 4–5 minutes per side, or until golden brown and fully cooked through.
- Transfer the cooked poppers to a paper towel-lined plate to absorb any excess oil. Let them rest for 2–3 minutes before serving. Garnish with fresh herbs if desired.
Notes
- Be sure to squeeze excess moisture from the sweet potato to help the poppers hold their shape.
- Try to make all poppers the same size for even cooking.
- If you don’t have a meat thermometer, cut a popper in half to check that it’s fully cooked.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Freeze cooked poppers in a single layer, then transfer to a container or freezer bag for up to 3 months.
- Reheat in the oven, skillet, or air fryer for best texture.
