Description
Superhealthy Salmon Burgers combine the rich omega-3 goodness of salmon with aromatic Thai flavors for a nutritious and delicious meal. They offer a crispy exterior with a flaky, tender interior, making healthy eating feel indulgent.
Ingredients
Scale
- 4 boneless, skinless salmon fillets (about 550g/1lb 4oz total), cut into chunks
- 2 tbsp Thai red curry paste
- 1 thumb-size piece fresh root ginger, grated
- 1 tsp soy sauce (use tamari for a gluten-free version)
- 1 bunch coriander (half chopped for mixture, half leaves picked for serving)
- 1 tsp vegetable oil (or coconut oil for a healthier alternative)
- Lemon wedges, to serve
- 2 carrots, grated or julienned
- ½ large or 1 small cucumber, julienned
- 2 tbsp white wine vinegar
- 1 tsp golden caster sugar (or honey for a natural sweetener)
Instructions
- Tip the salmon into a food processor with the Thai red curry paste, grated ginger, soy sauce, and the chopped half of your coriander bunch. Pulse until roughly minced.
- With slightly wet hands, divide the mixture into 4 equal portions. Shape each portion into a burger patty about 2cm thick.
- If time allows, place the shaped patties in the refrigerator for 15 minutes to firm up.
- Heat the vegetable oil in a non-stick frying pan over medium heat. Add the salmon burgers and cook for approximately 4-5 minutes on each side until golden brown on the outside and just cooked through in the center.
- While the burgers are cooking, combine the grated carrots and cucumber in a bowl. Mix the white wine vinegar and sugar in a small separate bowl until dissolved and pour this dressing over the vegetables, tossing well to coat.
- Place the Superhealthy Salmon Burgers on plates, garnish with reserved coriander leaves and lemon wedges for squeezing over, and serve with the carrot and cucumber salad on the side.
Notes
- Store cooked salmon burgers in an airtight container in the refrigerator for up to 3 days.
- The uncooked patties can be frozen for up to 3 months when placed on a parchment-lined baking sheet and then stored in a freezer-safe container or bag with parchment between layers.
- Reheat gently in a skillet over medium-low heat for the best texture.
- Try various international flavors by changing the paste or adding different herbs like dill or parsley.
