Description

This Super Simple Oven-Barbequed Chicken offers juicy, tender meat with a smoky barbecue flavor that feels like it’s been slow-cooked on an outdoor grill, using only pantry staples and minimal prep time.


Ingredients

  • 6 bone-in chicken breast halves, with skin (substitute with thighs or drumsticks if desired)
  • Cooking spray
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hickory-flavored liquid smoke
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with aluminum foil and spray with cooking spray.
  3. Pat the chicken pieces dry with paper towels.
  4. In a small bowl, combine Worcestershire sauce and liquid smoke.
  5. In another bowl, mix chili powder, cumin, garlic powder, thyme, oregano, salt, and pepper.
  6. Brush each chicken piece with the Worcestershire and liquid smoke mixture.
  7. Rub the spice mixture onto each chicken piece, getting under the skin where possible.
  8. Arrange chicken pieces on the baking sheet, skin side up, not touching each other.
  9. Bake uncovered for 45-50 minutes until internal temperature reaches 165°F (74°C) and skin is crispy and caramelized.
  10. Optional: Turn the broiler on for the last 2-3 minutes for extra crispy skin, watching carefully.
  11. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Let the chicken come to room temperature before cooking for more even cooking.
  • For more flavor, marinate the chicken in the spice mixture for 2-24 hours in the refrigerator before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
