Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup canned pumpkin puree
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- For the Cinnamon Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons milk (more if needed)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ginger, nutmeg, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract until smooth.
- Gradually add dry ingredients to wet ingredients, gently folding until a dough forms. Do not overmix.
- Scoop dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 12-15 minutes until lightly golden and set at the edges, but still soft in the middle.
- Cool cookies on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- To make frosting, beat softened butter until creamy. Gradually add powdered sugar, milk, cinnamon, and vanilla extract. Beat until smooth and fluffy, adding more milk if needed.
- Once cookies are cool, spread a generous layer of cinnamon frosting on each.
- Serve immediately or store in an airtight container.
Notes
- For richer flavor, use fresh pumpkin puree.
- Adjust spices to your preference; add cloves or allspice for variety.
- Do not overbake to maintain softness; cookies should look slightly underbaked when removed from the oven.
- Pipe frosting for a decorative look.
- Add chocolate chips, rolled oats, chopped nuts, or use spiced cream cheese frosting for variations.
- Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
