  • 4 sirloin steaks (8 oz each), at room temperature
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • A squeeze of fresh lemon juice (optional)

Instructions

  1. In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme leaves, sea salt, and pepper. Mix thoroughly until well combined.
  2. Transfer the butter mixture onto a piece of plastic wrap. Roll into a log shape, twist the ends to secure, and refrigerate for at least 15 minutes while you prepare the steaks.
  3. Remove steaks from the refrigerator 30 minutes before cooking to bring them to room temperature.
  4. Pat the steaks dry with paper towels. Brush both sides with olive oil and season generously with salt and pepper.
  5. Heat a large cast-iron skillet over high heat until very hot (about 2 minutes).
  6. Gently place the steaks in the hot skillet. Cook for approximately 3-4 minutes on the first side without moving, flip once and cook for another 3-4 minutes for medium-rare (internal temperature of 135°F).
  7. During the last minute of cooking, add a slice of the prepared garlic butter to the top of each steak, allowing it to begin melting.
  8. Remove the steaks from the pan and let them rest on a cutting board or warm plate for 5 minutes before serving.
  9. Serve each steak with an additional slice of garlic butter on top, allowing it to melt over the hot steak.
