Ingredients

  • 2 tbsp fajita seasoning mix (store-bought or homemade)
  • 2 tbsp olive oil
  • ¼ cup fresh lime juice (about 2 limes)
  • 2 cloves garlic, minced
  • 1 medium onion, sliced into thin strips
  • 2 medium bell peppers (mix of colors), sliced into thin strips
  • Warm flour or corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices or guacamole
  • Sour cream or Greek yogurt
  • Pico de gallo or salsa

Instructions

  1. Combine olive oil, lime juice, minced garlic, and fajita seasoning in a medium bowl to make the marinade.
  2. Add shrimp to the marinade, toss to coat, and marinate for 10-15 minutes.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add sliced onions, cook for 2-3 minutes until they start to soften.
  5. Add bell peppers, cook for 5-7 minutes, stirring occasionally, until slightly charred and crisp-tender.
  6. Transfer vegetables to a plate and keep warm.
  7. Add marinated shrimp to the same pan in a single layer, cook for 2 minutes per side until pink and slightly charred.
  8. Return vegetables to the pan with shrimp and toss together.
  9. Squeeze fresh lime juice over everything, sprinkle with cilantro, and toss again.
