  • 2/3 cup mayonnaise

  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, finely diced
  • 1/3 cup red onion, finely chopped
  • 1 scallion, diced
  • Optional: 1/2 cup red grapes, halved, 1/3 cup toasted walnuts, chopped, 1 ripe avocado, diced, 1 tablespoon fresh lime juice, 1/4 cup Kalamata olives, chopped, 1-2 jalapeños, seeded and minced

Instructions

  1. Remove all the meat from your rotisserie chicken, discarding the skin and bones. Chop the meat into bite-sized pieces or shred it, depending on your preference. You’ll need approximately 3 cups of chicken.
  2. In a large mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, lemon pepper, and black pepper. Whisk until smooth and well-blended.
  3. Add the finely diced celery, red onion, and scallion to your dressing. Mix well to combine.
  4. Gently fold the chopped rotisserie chicken into the mixture, ensuring all pieces are evenly coated with the dressing. Be careful not to overmix.
  5. Optionally, add your chosen add-ins such as grapes, walnuts, avocado, lime juice, olives, or jalapeños.
