Description

This Puff Pastry Salmon Fillet recipe transforms salmon into an elegant meal with minimal effort. Flaky pastry, vibrant pesto, and fresh spinach create a delightful dish perfect for any occasion.

Ingredients

Scale
  • 2 (12 ounce) skinless, boneless salmon fillets
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • Seasoned salt to taste
  • 1 (6 ounce) package fresh spinach leaves
  • 1 (17.25 ounce) package frozen puff pastry, thawed
  • ⅓ cup pesto
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Thaw the puff pastry according to package instructions. The pastry should be cold but pliable.
  3. Season the salmon fillets on both sides with onion powder, garlic powder, and seasoned salt to taste.
  4. On a lightly floured surface, roll out one sheet of puff pastry to smooth the creases. Place half of the spinach leaves in the center, creating a bed approximately the size of your salmon fillet.
  5. Spread about 2-3 tablespoons of pesto over the spinach layer.
  6. Place one seasoned salmon fillet on top of the pesto and spinach.
  7. Carefully fold the puff pastry over the salmon, starting with the longer sides and then the shorter ends. Seal the edges by pressing with a fork.
  8. Transfer to the prepared baking sheet and repeat the process with the second sheet of puff pastry and remaining ingredients.
  9. Brush the tops and sides of each pastry with beaten egg to create a golden finish when baked.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the salmon is cooked through.
  11. Allow to rest for 5 minutes before serving your beautiful Puff Pastry Salmon Fillet.

Notes

  • Consider using whole wheat puff pastry for a healthier version.
  • Wild-caught salmon offers the best flavor, but farm-raised also works well.
  • Add lemon zest to your seasoning mix for a bright, citrusy note.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
