A delicious and easy recipe for Pesto Bruschetta Chicken, featuring chicken breasts topped with fresh basil pesto, cherry tomatoes, and melted mozzarella cheese.

- 2 boneless, skinless chicken breasts
- 1 cup fresh basil pesto
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
- Once the oil is hot, add the chicken breasts and sear them for 5-7 minutes on each side until golden brown but not fully cooked. Remove from heat.
- In a medium bowl, combine the cherry tomatoes with a pinch of salt and pepper, and set aside.
- Spread the basil pesto evenly over the top of each chicken breast.
- Add the halved cherry tomatoes on top of the pesto, followed by the shredded mozzarella cheese.
- Transfer the chicken to a baking dish and place it in the preheated oven.
- Bake for about 20-25 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves if desired before serving.
Notes
- This recipe can be easily doubled for larger servings.
- Feel free to substitute the mozzarella cheese with another cheese of your choice.
- For a healthier option, consider using low-fat mozzarella.
