Description
These delightful Orange Pikelets bring a burst of sunshine to any breakfast or brunch table, offering a fluffy texture with a bright citrus flavor.
Ingredients
Scale
- ⅓ cup orange juice (freshly squeezed works best)
- 1 ½ tablespoons additional orange juice (for extra flavor punch)
- ¼ cup white sugar
- ¾ cup self-rising flour
- 2 tablespoons additional self-rising flour
- 1 pinch salt
- Cooking spray or butter for greasing
Instructions
- In a medium bowl, combine ⅓ cup orange juice with the additional 1 ½ tablespoons orange juice.
- Add ¼ cup white sugar to the orange juice and stir until sugar begins to dissolve.
- Sift together ¾ cup self-rising flour, the additional 2 tablespoons flour, and a pinch of salt in a separate bowl.
- Gradually add the dry ingredients to the orange juice mixture, stirring gently until just combined. Be careful not to overmix – a few small lumps are perfectly fine and will give you fluffier Orange Pikelets.
- Allow the batter to rest for 5 minutes. This gives the leavening agents time to activate, resulting in lighter, fluffier Orange Pikelets.
- Heat a non-stick frying pan or griddle over medium heat. Lightly coat with cooking spray or a small amount of butter.
- For each pikelet, drop approximately 2 tablespoons of batter onto the hot surface. These homemade Orange Pikelets with fresh fruit should be about 3-4 inches in diameter.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the Orange Pikelets and cook for another 1-2 minutes until golden brown on both sides.
- Transfer to a plate and keep warm while cooking the remaining batter.
Notes
- For vegan Orange Pikelets, use plant-based milk with 1 tablespoon of vinegar instead of orange juice in the batter.
- To make gluten-free Orange Pikelets, substitute self-rising flour with a gluten-free self-rising flour blend.
- For extra orange flavor, add 1-2 teaspoons of orange zest to the batter.
- Brown sugar can replace white sugar for a deeper caramel flavor.
- Orange Pikelets can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
