Ingredients

- 2 chicken breasts, diced
- 2 medium zucchinis, sliced
- 1 cup orzo pasta
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken breasts and cook until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the skillet and sauté until translucent, about 3-4 minutes.
- Stir in the sliced zucchinis and cook for an additional 2-3 minutes until slightly tender.
- Add the orzo, chicken broth, dried oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
- Simmer for about 15 minutes or until the orzo is cooked and has absorbed most of the liquid.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff the orzo with a fork and garnish with fresh parsley before serving.
Notes
- Feel free to substitute chicken with another protein of your choice.
- For more flavor, you can add additional herbs or spices.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
