One Pan Chicken Zucchini and Orzo

Description

A healthy and flavorful one-pan meal featuring chicken, zucchini, and orzo pasta cooked together for a quick and easy dinner.


Ingredients

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup orzo pasta
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken breasts and cook until browned, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the skillet and sauté until translucent, about 3-4 minutes.
  4. Stir in the sliced zucchinis and cook for an additional 2-3 minutes until slightly tender.
  5. Add the orzo, chicken broth, dried oregano, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
  7. Simmer for about 15 minutes or until the orzo is cooked and has absorbed most of the liquid.
  8. Remove from heat and let it sit covered for another 5 minutes.
  9. Fluff the orzo with a fork and garnish with fresh parsley before serving.

Notes

  • Feel free to substitute chicken with another protein of your choice.
  • For more flavor, you can add additional herbs or spices.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
