Description

A delightful no-bake dessert with layers of chocolate, vanilla, and strawberry flavors, topped with a coconut twist.

Ingredients

Scale
  • 2 packets (274g total) Oreo Original biscuits
  • 60g butter, melted and cooled
  • 395g can sweetened condensed milk
  • 2 cups desiccated coconut
  • 1 cup shredded coconut
  • 2 cups pure icing sugar
  • Pink food coloring
  • Icing sugar for dusting (optional)

Instructions

  1. Line a 20cm x 30cm slice pan with baking paper, leaving an overhang on all sides to help with removal later.
  2. Place the Oreo biscuits in a food processor and process until finely crushed.
  3. Add the melted butter to the crushed biscuits and pulse until well combined.
  4. Press the mixture firmly into the base of the prepared pan, using the back of a spoon to create a smooth, even surface.
  5. Refrigerate the base for about 30 minutes until firm.
  6. In a large bowl, combine the sweetened condensed milk, desiccated coconut, shredded coconut, and icing sugar. Mix thoroughly until well combined.
  7. Divide the coconut mixture evenly into three separate bowls.
  8. Leave the first portion as is for the white vanilla layer.
  9. Add a few drops of pink food coloring to the second portion and mix well until you achieve a consistent pink color for the strawberry layer.
  10. For the chocolate layer, add 2 tablespoons of cocoa powder to the third portion and mix until evenly distributed.
  11. Spread the chocolate coconut mixture evenly over the chilled Oreo base, pressing down firmly.
  12. Next, carefully add the white vanilla coconut layer on top of the chocolate layer, smoothing it out with the back of a spoon.
  13. Finally, spread the pink strawberry coconut mixture as the top layer, creating a smooth, even surface.
  14. Refrigerate the No-bake Neapolitan Coconut Ice Slice for at least 3-4 hours, or preferably overnight, to set completely.
