Description
A delicious and healthy low-carb stir fry featuring spiralized zucchini instead of noodles, combined with tender pork and colorful bell peppers.

- 2 medium zucchini, spiralized
- 1 pound pork tenderloin, thinly sliced
- 1 cup bell peppers, sliced (red, yellow, or green)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Begin by spiralizing the zucchini into zoodles using a spiralizer or a vegetable peeler. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the thinly sliced pork tenderloin to the skillet and season with salt and pepper. Cook for 4-5 minutes, until browned and cooked through.
- Remove the pork from the skillet and set it aside on a plate.
- In the same skillet, add another tablespoon of olive oil and add the sliced bell peppers. Stir-fry for 3-4 minutes until tender.
- Add the zoodles to the skillet with bell peppers and stir-fry for an additional 2-3 minutes until the zoodles are slightly softened.
- Return the cooked pork to the skillet and toss everything together. Allow to heat for 1-2 minutes.
- Remove from heat and serve immediately.
Notes
- Feel free to add other vegetables of your choice such as onions or snap peas.
