Description
Low Carb Cheesy Cauliflower Breadsticks are a delicious and healthy alternative to traditional breadsticks, made entirely from cauliflower and cheese.

- 1 medium head of cauliflower, riced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Remove the leaves from the cauliflower and cut it into florets. Use a food processor to rice the cauliflower until it resembles grains of rice.
- Place the riced cauliflower in a clean kitchen towel and wring out the moisture until very little water remains.
- In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper. Mix well until all ingredients are combined.
- Transfer the cauliflower mixture to the prepared baking sheet and spread it into a rectangular shape, about 1/2 inch thick.
- Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
- Remove from the oven and let it cool slightly before slicing into breadstick shapes.
- Optionally, top the breadsticks with additional cheese or herbs and return to the oven for 5 minutes to melt the cheese.
- Serve warm with marinara sauce or your favorite dipping sauce.
Notes
- For a spicier kick, consider adding red pepper flakes to the mixture.
- These breadsticks can be frozen and reheated later for a quick snack.
