Description

Low Carb Cheesy Cauliflower Breadsticks are a delicious and healthy alternative to traditional breadsticks, made entirely from cauliflower and cheese.


Ingredients

Scale
  • 1 medium head of cauliflower, riced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and cut it into florets. Use a food processor to rice the cauliflower until it resembles grains of rice.
  3. Place the riced cauliflower in a clean kitchen towel and wring out the moisture until very little water remains.
  4. In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper. Mix well until all ingredients are combined.
  5. Transfer the cauliflower mixture to the prepared baking sheet and spread it into a rectangular shape, about 1/2 inch thick.
  6. Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
  7. Remove from the oven and let it cool slightly before slicing into breadstick shapes.
  8. Optionally, top the breadsticks with additional cheese or herbs and return to the oven for 5 minutes to melt the cheese.
  9. Serve warm with marinara sauce or your favorite dipping sauce.

Notes

  • For a spicier kick, consider adding red pepper flakes to the mixture.
  • These breadsticks can be frozen and reheated later for a quick snack.
