Linda’s Lasagna is the ultimate comfort food, featuring layers of savory meat sauce, tender pasta, and creamy cheese blend, perfect for family gatherings or a cozy weekend meal.


Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 2 (6 ounce) cans tomato paste
  • 1 (14.5 ounce) can crushed tomatoes
  • 2 cups water
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon white sugar
  • 12 ounces cottage cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 9 lasagna noodles
  • 1 pound shredded mozzarella cheese

Instructions

  1. In a large saucepan, brown the ground beef and onion over medium heat until no longer pink.
  2. Add tomato paste, crushed tomatoes, and water, then stir to combine.
  3. Mix in oregano, garlic powder, salt, black pepper, and sugar.
  4. Simmer sauce on low for 30 minutes, stirring occasionally.
  5. Meanwhile, cook lasagna noodles according to package directions and drain.
  6. In a bowl, combine cottage cheese, Parmesan cheese, and egg.
  7. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  8. Spread 1 cup of meat sauce in the bottom of the dish, layer 3 noodles, then 1/3 cheese mixture, and some mozzarella.
  9. Repeat layers twice more and top with remaining mozzarella cheese.
  10. Cover with foil and bake for 25 minutes, then remove foil and bake for another 25 minutes until golden.
  11. Let lasagna rest for 15 minutes before serving.

Notes

  • Assemble lasagna up to 24 hours in advance and refrigerate, adding 15 minutes to bake time if cold.
  • For vegetarian lasagna, substitute beef with vegetables or plant-based meat.
  • Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
