Description

These Keto Blondies (Dairy Free) are the perfect chewy, rich, and satisfying dessert that fits right into a low-carb and dairy-free lifestyle. With the aroma of vanilla and almond, they provide a delicious treat without compromising ketosis.

Ingredients

Scale
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 cup golden monk fruit sweetener
  • 2 large eggs or vegan substitutes
  • 1/2 cup dairy-free butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup keto chocolate chips
  • 1/2 cup mix-ins (chopped walnuts, pecans, macadamia nuts, or extra chocolate chunks)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the almond flour and baking powder. Set aside.
  3. In a large bowl, cream together the softened dairy-free butter and monk fruit sweetener until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time (or vegan substitutes), beating well after each addition. Stir in the vanilla extract until well combined.
  5. Gradually fold the dry ingredients into the wet mixture, stirring until just combined.
  6. Gently fold in the keto chocolate chips and your choice of mix-ins.
  7. Spread the batter evenly into the prepared baking pan. Press it into an even layer.
  8. Bake for 20-25 minutes, until the edges are golden brown.
  9. Allow the blondies to cool completely in the pan before lifting out using the parchment paper overhang.
  10. Cut into 16 squares and enjoy!

Notes

  • For picture-perfect squares, refrigerate the blondies for 30 minutes before cutting.
  • The batter can be prepared in advance and refrigerated for up to 24 hours.
  • Store blondies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
  • Use unsweetened, natural nut butter for a slight variation.
