A delicious low-carb meal featuring ground beef, sautéed vegetables, and provolone cheese, all baked to perfection.

- 1 pound ground beef
- 1 cup sliced bell peppers (red, green, yellow)
- 1 cup sliced mushrooms
- 1 medium onion, chopped
- 1 cup shredded provolone cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes.
- Add the minced garlic, sliced bell peppers, and mushrooms to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- In a separate pan, brown the ground beef over medium heat. Season with salt, pepper, and Italian seasoning.
- Once the beef is cooked through, drain any excess fat and add it to the skillet with the vegetables. Mix well.
- Pour in the heavy cream and stir until everything is evenly coated. Allow to simmer for about 2 minutes.
- Transfer the mixture into a greased 9×13-inch (or equivalent) baking dish.
- Sprinkle the shredded provolone cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving.
Notes
- For a spicier version, add sliced jalapeños or red pepper flakes.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
