Description

A delicious low-carb meal featuring ground beef, sautéed vegetables, and provolone cheese, all baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 cup sliced bell peppers (red, green, yellow)
  • 1 cup sliced mushrooms
  • 1 medium onion, chopped
  • 1 cup shredded provolone cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes.
  3. Add the minced garlic, sliced bell peppers, and mushrooms to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  4. In a separate pan, brown the ground beef over medium heat. Season with salt, pepper, and Italian seasoning.
  5. Once the beef is cooked through, drain any excess fat and add it to the skillet with the vegetables. Mix well.
  6. Pour in the heavy cream and stir until everything is evenly coated. Allow to simmer for about 2 minutes.
  7. Transfer the mixture into a greased 9×13-inch (or equivalent) baking dish.
  8. Sprinkle the shredded provolone cheese evenly over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Let the casserole cool for a few minutes before serving.

Notes

  • For a spicier version, add sliced jalapeños or red pepper flakes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
