- 100g almond flour
- 100g powdered erythritol
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- Food coloring (optional)
- Filling of choice (sugar-free ganache, buttercream, or jam)
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour and powdered erythritol. Sift them together to remove any lumps.
- In a separate bowl, whisk the egg whites and cream of tartar until soft peaks form.
- Gradually add the erythritol mixture to the egg whites, continuing to whisk until stiff peaks form and the mixture is glossy.
- If using food coloring, gently fold it in until evenly distributed.
- Using a piping bag, pipe small rounds of the mixture onto the prepared baking sheet, leaving space between each macaron.
- Let the piped macarons sit at room temperature for about 30 minutes, allowing them to form a skin.
- Bake in the preheated oven for 15-20 minutes, until they are firm and easily lift from the parchment paper.
- Allow the macarons to cool completely on the baking sheet.
- Once cool, pair macarons with your chosen filling and sandwich them together.
