Instructions
- In a microwave-safe mug, combine the almond flour, cocoa powder, erythritol, and baking powder. Mix well until there are no lumps.
- Add the egg to the dry ingredient mixture and stir until fully incorporated.
- Pour in the almond milk, melted coconut oil, and vanilla extract. Stir until the batter is smooth and well combined.
- Microwave the mug on high for about 60 to 90 seconds. Start checking at 60 seconds; the cake is done when it has risen and is set in the center.
- Let the mug cake cool for a few minutes before enjoying it directly from the mug.
