Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1/4 cup chocolate chips (sugar-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the almond flour, powdered erythritol, cinnamon, salt, and cocoa powder. Mix well.
  3. In a separate bowl, whisk together the eggs and vanilla extract until frothy.
  4. Gradually add the dry ingredients to the egg mixture and mix until a dough forms.
  5. Divide the dough into equal portions and roll each one into a thin oval shape on the baking sheet.
  6. Bake the oval shapes for 10-12 minutes or until they are firm but not browned.
  7. Once baked, allow the shells to cool for a few minutes before carefully rolling them into cannoli shapes.
  8. In a mixing bowl, combine the ricotta cheese, heavy cream, and chocolate chips; mix until smooth.
  9. Fill each cooled cannoli shell with the ricotta mixture using a piping bag or spoon.
  10. Dust with additional powdered erythritol before serving.

Notes

  • Make sure to let the shells cool completely before filling them to prevent them from becoming soggy.
  • Feel free to adjust the sweetness of the ricotta filling according to your taste.
