Description
A rich, hearty beef stew with tender chunks of beef, low-carb vegetables, and a savory broth. This keto-friendly recipe provides all the comfort of traditional stew with just 8g net carbs per serving.
Ingredients
Scale
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon tomato paste
- 2 tablespoons apple cider vinegar
- 4 cups beef bone broth (homemade preferred, or low-sodium store-bought)
- 1 tablespoon Worcestershire sauce (ensure it’s sugar-free)
- 1 bay leaf
- 1 teaspoon dried thyme
- ½ teaspoon xanthan gum (for thickening)
- 1 medium onion, chopped (about ½ cup)
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 8 ounces mushrooms, quartered
- 1 medium turnip, peeled and diced (great potato substitute)
- 2 cups cauliflower florets, cut small
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Pat the beef chunks dry with paper towels. Season generously with salt and pepper.
- Heat olive oil and butter in a large Dutch oven over medium-high heat. Sear the beef cubes on all sides until deeply browned, about 2-3 minutes per side. Transfer beef to a plate.
- In the same pot, cook onion and celery until softened, about 4 minutes. Add garlic and cook for 30 seconds. Stir in tomato paste and cook for 1 minute.
- Deglaze the pot with apple cider vinegar, scraping up the browned bits from the bottom. Add seared beef, mushrooms, beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a simmer and reduce heat to low. Cover and cook for 1 hour.
- Add turnip and cauliflower. Continue to simmer for 30-45 minutes until beef and vegetables are tender.
- In a small bowl, whisk xanthan gum with 2 tablespoons of hot broth. Stir into the stew and simmer uncovered for 10-15 minutes until thickened. Adjust seasonings as needed. Remove bay leaf and garnish with parsley.
Notes
- For best results, sear the beef in batches to avoid overcrowding the pot, which can cause steaming rather than browning.
- Bone broth adds depth of flavor, but regular beef broth can be used if necessary.
- If you prefer thicker stew, add an extra teaspoon of xanthan gum or use cream cheese as an alternative thickener.
- Let the stew sit overnight for even better flavor.
