Ingredients

  • 3 ripe bananas
  • 2 cups almond flour
  • 3 large eggs
  • 1/2 cup melted coconut oil
  • 1/4 cup erythritol sweetener
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the eggs and melted coconut oil until well combined.
  4. Add the erythritol, baking soda, vanilla extract, and salt to the banana mixture, and mix until fully incorporated.
  5. Gradually add the almond flour, stirring until the batter is smooth. If using, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
