- 1 1/4 cups crushed graham crackers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar
- 2 tablespoons strawberry jam
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine crushed graham crackers, granulated sugar, and melted butter. Press mixture evenly into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese until smooth. Gradually beat in sweetened condensed milk until well combined.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract and lemon juice.
- Pour cream cheese mixture over the graham cracker crust.
- Bake for 30-35 minutes, or until the center is almost set.
- While the bars are baking, prepare the strawberry topping. In a small bowl, combine sliced strawberries, powdered sugar, and strawberry jam. Gently toss to coat.
- Once the bars are out of the oven, let them cool slightly on a wire rack.
- Spread the strawberry topping evenly over the warm bars.
- Chill the bars in the refrigerator for at least 2 hours, or until firm.
- Lift the bars out of the pan using the parchment paper overhang. Cut into squares or bars.
