Description

Irresistible Mother’s Day Strawberry Custard Bars are a delightful treat combining fresh strawberries and creamy custard. These bars are visually stunning, easy to prepare, and perfect for celebrating Mom.


Ingredients

  • 1 1/4 cups crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup powdered sugar
  • 2 tablespoons strawberry jam

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine crushed graham crackers, granulated sugar, and melted butter. Press mixture evenly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Gradually beat in sweetened condensed milk until well combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and lemon juice.
  5. Pour cream cheese mixture over the graham cracker crust.
  6. Bake for 30-35 minutes, or until the center is almost set.
  7. While the bars are baking, prepare the strawberry topping. In a small bowl, combine sliced strawberries, powdered sugar, and strawberry jam. Gently toss to coat.
  8. Once the bars are out of the oven, let them cool slightly on a wire rack.
  9. Spread the strawberry topping evenly over the warm bars.
  10. Chill the bars in the refrigerator for at least 2 hours, or until firm.
  11. Lift the bars out of the pan using the parchment paper overhang. Cut into squares or bars.
