Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, sliced
  • 2 cups fresh basil leaves
  • 1 cup cherry tomatoes, halved
  • 1/4 cup balsamic glaze
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, salt, and pepper. Mix well.
  3. Rub the olive oil mixture all over the chicken breasts.
  4. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. During the last 2 minutes of grilling, layer each chicken breast with slices of mozzarella cheese and cherry tomato halves. Close the grill lid to melt the cheese.
  6. Once the cheese is melted and the chicken is cooked through, remove from the grill.
  7. Top each chicken breast with fresh basil leaves and drizzle with balsamic glaze.
  8. Let the chicken rest for a few minutes before serving.
