- 4 boneless, skinless chicken breasts
- 1 cup fresh mozzarella cheese, sliced
- 2 cups fresh basil leaves
- 1 cup cherry tomatoes, halved
- 1/4 cup balsamic glaze
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, combine olive oil, minced garlic, salt, and pepper. Mix well.
- Rub the olive oil mixture all over the chicken breasts.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- During the last 2 minutes of grilling, layer each chicken breast with slices of mozzarella cheese and cherry tomato halves. Close the grill lid to melt the cheese.
- Once the cheese is melted and the chicken is cooked through, remove from the grill.
- Top each chicken breast with fresh basil leaves and drizzle with balsamic glaze.
- Let the chicken rest for a few minutes before serving.

- This dish pairs well with a fresh garden salad or grilled vegetables.
