- 3 tablespoons extra-virgin olive oil, divided
- 2 tablespoons fresh lemon juice (approx. 1 medium lemon)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano (or 2 teaspoons fresh oregano)
- 1 pound chicken thighs, boneless and skinless, cut into 1.5-inch pieces
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/2 pound asparagus, tough ends removed and cut into 2-inch pieces
- 1 zucchini, sliced into half moons
- 1 lemon, sliced thin for grilling
Instructions
- In a medium bowl, whisk together 2 tablespoons olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper.
- Add chicken pieces to the marinade and toss to coat. Cover and marinate for at least 15 minutes or up to 4 hours in the refrigerator.
- In a separate bowl, toss asparagus and zucchini with the remaining 1 tablespoon olive oil. Season lightly with salt and pepper.
- If using wooden skewers, soak them in water for 30 minutes. Thread chicken, vegetables, and lemon slices onto skewers, leaving space between pieces.
- Preheat grill or grill pan to medium-high heat (375-400°F). Grill skewers for 4-5 minutes per side until chicken is cooked through and vegetables are tender, turning occasionally.
Notes
- For added flavor, include 1/2 teaspoon dried mint in the marinade.
- Store cooked skewers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
