Ingredients

  • 2 teaspoons active dry yeast
  • 2 teaspoons salt
  • 2 tablespoons sugar
  • 1/8 cup canola oil
  • 5–6 cups bread flour
  • 2/3 cup baking soda (for water bath)
  • 10 cups water (for boiling)
  • 1 egg yolk mixed with 2 tablespoons water (for egg wash)
  • 1 tablespoon kosher salt (for topping)

Instructions

  1. In a large bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy.
  2. Add the salt, sugar, and canola oil to the yeast mixture and stir to combine.
  3. Gradually add 5 cups of bread flour, mixing well after each addition, until the dough begins to pull away from the sides of the bowl.
  4. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
  7. In a large pot, bring 10 cups of water and the baking soda to a rolling boil.
  8. After the dough has risen, punch it down gently and divide into 12 equal portions. Shape each portion into a smooth ball.
  9. Carefully drop 2-3 dough balls into the boiling water bath for 30 seconds on each side.
  10. Remove with a slotted spoon, drain excess water, and place on prepared baking sheets.
  11. Score an ‘X’ on the top of each roll, brush with egg wash, and sprinkle with kosher salt.
  12. Bake for 15-18 minutes until deep golden brown.
  13. Transfer to a wire rack to cool for at least 10 minutes before serving.

Notes

  • For a whole grain variation, substitute up to 2 cups of bread flour with whole wheat flour.
  • If you don’t have bread flour, all-purpose flour will work but rolls may be slightly less chewy.
  • Vegetable oil can replace canola oil with minimal difference in results.
  • Store in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
