- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 bell pepper, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper to the skillet. Sauté for 3-4 minutes until they are softened.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the ground turkey to the skillet. Cook, breaking it apart, until it is no longer pink, about 5-7 minutes.
- Add the diced sweet potatoes to the skillet. Stir well to combine.
- Season with paprika, cumin, salt, and pepper. Mix thoroughly.
- Cover the skillet and reduce heat to medium-low. Cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Once done, remove from heat and garnish with fresh parsley before serving.
