Description

This Easy Chicken Skillet Dinner combines tender chicken breasts with a creamy corn and tomato sauce in just one pan, perfect for busy weeknights.

Ingredients

Scale
  • 4 chicken breasts (1½ to 2 pounds total)
  • ¼ teaspoon salt
  • â…› teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • ¼ cup low-sodium chicken broth
  • 1 (20-ounce) package frozen creamed corn
  • ½ block (4 ounces) cream cheese
  • 1 (10-ounce) can RO-TEL Original Diced Tomatoes and Green Chiles
  • 1 teaspoon taco seasoning (store-bought or homemade)
  • Optional toppings: Lime wedges, Chopped cilantro, Sliced green onions, Sliced jalapeños

Instructions

  1. Season chicken breasts with salt and pepper on both sides. Slice them horizontally if very thick to create thinner cutlets.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through.
  3. Remove chicken from skillet and cover loosely with foil to keep warm.
  4. Add chicken broth to the same skillet and scrape up any browned bits from the bottom.
  5. Add the frozen creamed corn and stir to combine, allowing it to heat through for about 2-3 minutes.
  6. Cut cream cheese into pieces and add to skillet. Stir until melted into the corn mixture.
  7. Add RO-TEL tomatoes and taco seasoning, stirring well. Let the sauce simmer for 3-4 minutes until slightly thickened.
  8. Return the chicken to the skillet, spooning some sauce over the top. Simmer together for 2-3 minutes to warm through.
  9. Garnish with optional toppings: lime juice, cilantro, green onions, or jalapeños.

Notes

  • Use a large, heavy skillet like cast-iron for even heat distribution.
  • Don’t overcrowd the pan; cook in batches if necessary.
  • Check chicken temperature with a meat thermometer; it should reach 165°F.
  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat gently in a skillet with a splash of broth or use a microwave on 70% power.
