Description

Enjoy the perfect balance of a golden, crunchy coating and tender, flaky fish with this homemade Crispy Fried Fish recipe. Ideal for a quick family dinner or a gathering with friends, this dish brings restaurant-quality results to your kitchen.

Ingredients

Scale
  • 1 ½ cups beer (lager or pale ale works best)
  • 1 cup all-purpose flour (substitute rice flour for gluten-free Crispy Fried Fish)
  • 1 large egg, lightly beaten
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 pound cod fillets (or any firm white fish like haddock, pollock, or tilapia)
  • 2 cups crushed cornflake crumbs
  • 1 teaspoon Cajun seasoning
  • 1 quart oil for frying (vegetable, canola, or peanut oil)
  • Lemon wedges for serving

Instructions

  1. In a medium bowl, whisk together the beer, flour, beaten egg, garlic powder, salt, and pepper until smooth.
  2. Let the batter rest for 10-15 minutes.
  3. Prepare your fish by cutting the cod fillets into 4-inch pieces and patting them dry with paper towels.
  4. In a shallow dish, combine the crushed cornflake crumbs with Cajun seasoning.
  5. Set up your workstation: fish fillets, beer batter, seasoned cornflake mixture, and a plate lined with paper towels.
  6. Heat oil in a deep pot to 375°F (190°C).
  7. Dip each fish piece into the beer batter, allowing excess to drip off, then coat in the cornflake mixture.
  8. Lower the fish into the hot oil and fry for 3-4 minutes until golden brown, turning once halfway through.
  9. Remove the fish with a slotted spoon and drain on paper towels. Keep warm in a 200°F (95°C) oven while finishing all batches.
  10. Serve immediately with lemon wedges.

Notes

  • For a lighter version, substitute seltzer water for beer.
  • Fish should be patted dry before battering for the best results.
  • Look for sustainably-sourced fish when possible.
  • To maintain crispness, reheat leftovers in a 350°F (175°C) oven for 10-12 minutes.
