Description

This Creamy Asparagus Chicken Casserole is a quick, satisfying meal perfect for busy nights. It combines tender chicken, fresh asparagus, and mushrooms in a rich, velvety sauce, with cheese providing a delightful golden topping.

Ingredients

Scale
  • 4 tablespoons butter
  • 1½ pounds boneless skinless chicken breasts (cut into 1″ pieces)
  • 1 pound asparagus (cut into 1″ to 2″ pieces, lightly steamed)
  • ¼ cup onion (chopped)
  • 8 ounces mushrooms (sliced)
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme
  • ¼ cup mayonnaise (avocado oil mayonnaise)
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1½ cups shredded gouda or swiss cheese
  • ½ cup shredded parmesan cheese (divided)

Instructions

  1. Preheat oven to 375°F (190°C). Prepare chicken, asparagus, onion, and mushrooms.
  2. In a skillet, melt 2 tablespoons butter over medium-high heat. Cook chicken until golden and nearly cooked through. Set aside.
  3. Sauté onions in the remaining butter until translucent, then add mushrooms and cook until browned.
  4. Add chicken broth, heavy cream, salt, pepper, and thyme. Simmer until thickened.
  5. Whisk in mayonnaise, dijon mustard, and lemon juice.
  6. Return chicken and add asparagus, 1¼ cups gouda/swiss cheese, and ¼ cup parmesan to the skillet. Stir to combine.
  7. Top with remaining cheese and bake for 15-20 minutes until golden and bubbly.
  8. Let rest for 5 minutes before serving.

Notes

  • For low-carb, use all mushrooms instead of rice.
  • Add 2 cups of pre-cooked rice for a richer dish.
  • Substitute half of the heavy cream with whole milk for a lighter version.
  • Consider dairy-free alternatives for cream and cheese.
  • Storage: Refrigerate in an airtight container for up to 3-4 days.
