Description

A creamy and healthy homemade ice cream made with protein-rich cottage cheese, naturally sweetened with honey and flavored with vanilla. Perfect for a guilt-free dessert that doesn’t compromise your healthy eating goals.


Ingredients

Scale
  • 2 cups full-fat Cottage Cheese
  • 1/3 cup Honey
  • 1 1/2 tsp Vanilla Extract
  • 1/8 tsp Kosher Salt
  • 1/2 cup Mixed Berries
  • Optional: 1/4 cup chopped nuts, 1 tbsp lemon zest, 2 tbsp mini dark chocolate chips, 1 tsp cinnamon, 2 tbsp unsweetened cocoa powder

Instructions

  1. Place the cottage cheese in a food processor or high-powered blender. Process until completely smooth, about 2-3 minutes, scraping down the sides as needed.
  2. Add honey, vanilla extract, and salt to the blended cottage cheese. Pulse again until all ingredients are fully incorporated and the mixture is silky smooth.
  3. Transfer the mixture to a mixing bowl. If you’re adding any flavor variations like cocoa powder or cinnamon, fold them in now.
  4. Gently fold in the mixed berries, being careful not to overmix. You want some berry pieces to remain intact for bursts of flavor.
  5. Pour the Cottage Cheese Ice Cream mixture into a freezer-safe container. A metal loaf pan works exceptionally well as metal conducts cold efficiently.
  6. Cover the container with plastic wrap, pressing it directly onto the surface of the mixture to prevent ice crystals from forming.
  7. Place in the freezer for at least 3-4 hours, or until firm. For best texture, stir the mixture every 30 minutes for the first 2 hours to break up any ice crystals.

  • Blend the cottage cheese until absolutely smooth for the best texture.
