- 2 cups full-fat Cottage Cheese
- 1/3 cup Honey
- 1 1/2 tsp Vanilla Extract
- 1/8 tsp Kosher Salt
- 1/2 cup Mixed Berries
- Optional: 1/4 cup chopped nuts, 1 tbsp lemon zest, 2 tbsp mini dark chocolate chips, 1 tsp cinnamon, 2 tbsp unsweetened cocoa powder
Instructions
- Place the cottage cheese in a food processor or high-powered blender. Process until completely smooth, about 2-3 minutes, scraping down the sides as needed.
- Add honey, vanilla extract, and salt to the blended cottage cheese. Pulse again until all ingredients are fully incorporated and the mixture is silky smooth.
- Transfer the mixture to a mixing bowl. If you’re adding any flavor variations like cocoa powder or cinnamon, fold them in now.
- Gently fold in the mixed berries, being careful not to overmix. You want some berry pieces to remain intact for bursts of flavor.
- Pour the Cottage Cheese Ice Cream mixture into a freezer-safe container. A metal loaf pan works exceptionally well as metal conducts cold efficiently.
- Cover the container with plastic wrap, pressing it directly onto the surface of the mixture to prevent ice crystals from forming.
- Place in the freezer for at least 3-4 hours, or until firm. For best texture, stir the mixture every 30 minutes for the first 2 hours to break up any ice crystals.
