Description

This Chocolate Éclair Dessert offers the delightful flavors of a French éclair in an easy, no-bake format. With layers of graham crackers, vanilla pudding, and a chocolate topping, it’s perfect for impressing guests effortlessly.

Ingredients

Scale
  • 2 individual packages graham crackers (approximately 18–20 whole crackers)
  • 3 cups cold milk
  • 2 (3 ounce) packages instant vanilla pudding mix
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (16 ounce) package prepared chocolate frosting

Instructions

  1. Pour the cold milk into a large mixing bowl.
  2. Add both packages of instant vanilla pudding mix.
  3. Using an electric mixer, beat on medium speed for 2 minutes until the mixture thickens.
  4. Let the pudding stand for 5 minutes to set.
  5. Gently fold in the thawed whipped topping until smooth.
  6. Line the bottom of a 9×13-inch baking dish with a layer of graham crackers.
  7. Spread half of the pudding mixture over the graham crackers.
  8. Layer more graham crackers on top, then add the remaining pudding.
  9. Top with a final layer of graham crackers.
  10. Microwave the frosting for 20-30 seconds, then pour over the top layer.
  11. Use an offset spatula to spread the frosting evenly.
  12. Cover with plastic wrap and refrigerate for at least 4 hours.
  13. Cut into squares for serving.

Notes

  • Chill the dessert overnight for the best texture.
  • Reserve some frosting for decorative swirls if desired.
  • Use a hot knife for cleaner cuts.
  • For a homemade touch, consider using a ganache instead of store-bought frosting.
  • Store in the refrigerator for up to 3-4 days, though best consumed within the first 2-3 days for optimal texture.
  • Not recommended for freezing as it may alter texture.
