Description

Cacio e Pepe Egg Noodles offer a comforting, Italian-inspired dish that transforms basic ingredients into a restaurant-quality meal with creamy, peppery cheese sauce and egg noodles.

Ingredients

Scale
  • 4 large eggs
  • Kosher salt
  • 2 tsp. canola oil, divided
  • 2 Tbsp. butter
  • 4 cloves garlic, minced
  • 1/4 cup freshly grated Parmesan, plus more for serving
  • 1/4 cup fresh parsley, chopped
  • Freshly ground black pepper

Instructions

  1. In a medium bowl, whisk eggs with a pinch of kosher salt until well combined.
  2. Heat 1 tsp of canola oil in a large non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet, tilting to spread evenly.
  4. Cook until almost set but still slightly runny on top, about 2-3 minutes.
  5. Using a spatula, gently roll the egg sheet into a cylinder.
  6. Transfer to a cutting board and let cool slightly, about 1 minute.
  7. Slice the egg roll crosswise into 1/4-inch wide ribbons to create your egg noodles.
  8. Gently unravel the ribbons and set aside.
  9. In the same skillet, heat the remaining 1 tsp of canola oil and butter over medium heat.
  10. Add minced garlic and cook until fragrant but not browned, about 30 seconds.
  11. Add a generous amount of freshly ground black pepper (about 1-2 tsp) and toast for 15 seconds.
  12. Return the egg noodles to the skillet with the garlic pepper butter.
  13. Toss gently to coat the noodles evenly.
  14. Remove from heat and immediately add 1/4 cup grated Parmesan.
  15. Toss quickly to create a creamy coating on the egg noodles.
  16. Garnish with fresh parsley, additional cheese, and more black pepper.

Notes

  • For the best flavor, use freshly grated Parmesan rather than pre-packaged versions.
  • Pecorino Romano can substitute for Parmesan for a more authentic flavor.
  • This egg-based version is naturally gluten-free.
  • Consider adding red pepper flakes for an extra kick.
  • For deeper flavor, try browning the butter slightly before adding garlic and pepper.
