Instructions
- In a medium bowl, combine chopped tomatoes, yellow pepper, basil, minced garlic, olive oil, salt, and pepper. Stir gently to combine all ingredients without crushing the tomatoes. Set aside to allow the flavors to meld while preparing the chicken.
- Place chicken breasts between plastic wrap and pound to an even ½-inch thickness. In a shallow dish, combine ⅛ cup olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Add chicken breasts and turn to coat thoroughly in the marinade. Let marinate for at least 10 minutes or up to 4 hours in the refrigerator for deeper flavor.
- Heat remaining ⅛ cup olive oil in a large skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off. Cook chicken breasts for 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Reduce heat to medium-low.
- Top each chicken breast with a slice of provolone cheese. Cover the skillet and cook for 1-2 minutes until cheese melts. Use a slotted spoon to top each chicken breast with the bruschetta mixture. Garnish with additional fresh basil and grated Parmesan if desired.
