Description
Bringhe is a delightful Filipino rice dish similar to Spanish paella, characterized by its creamy coconut milk and turmeric-flavored base. It’s a vibrant and flavorful dish perfect for special occasions or impromptu gatherings, delivering comfort and excitement in every bite.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon curry powder (or turmeric)
- 1 cup uncooked glutinous white rice
- 1 (16 ounce) can coconut milk
- 2 bay leaves
- Salt and pepper to taste
- 2 chicken leg quarters, meat removed and cut into bite-sized pieces
- ½ pound tiger prawns, peeled and deveined
- ½ pound cubed fully cooked ham
- 1 red bell pepper, sliced (optional)
- 1 cup green peas (fresh or frozen, optional)
- ¼ cup raisins (optional)
- 2–3 hard-boiled eggs, quartered (for garnish, optional)
Instructions
- Heat olive oil in a large, deep skillet or paella pan over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Stir in the curry powder or turmeric, coating the onion and garlic mixture.
- Add chicken pieces to the pan and cook until lightly browned on all sides, about 5-7 minutes.
- Add the cubed ham and tiger prawns, cooking for an additional 2-3 minutes until the prawns begin to turn pink.
- Season with salt and pepper to taste.
- Add the glutinous rice to the pan, stirring to coat it with the flavorful oil and spices.
- Pour in the coconut milk and add bay leaves.
- If needed, add enough water to ensure the rice is covered by about ½ inch of liquid.
- Bring the mixture to a gentle boil, then reduce heat to low.
- Cover the pan and simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
- If using optional add-ins like bell peppers, peas, or raisins, stir them in about 5 minutes before the rice is done.
- Remove from heat and let the Bringhe rest, covered, for 5-10 minutes.
- Garnish with hard-boiled egg quarters if desired before serving.
Notes
- Rinse the glutinous rice thoroughly before cooking to remove excess starch and prevent stickiness.
- Add a pinch of saffron threads or a dash of fish sauce for more complex flavors.
- If your dish seems too wet, uncover and cook for a few more minutes to evaporate excess liquid.
- When reheating, sprinkle a little water over the top before microwaving to restore moisture.
