Ingredients

- 1 lb chicken breast, diced
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon olive oil
- 2 cups steamed broccoli
- Cooked rice for serving
Instructions
- In a mixing bowl, combine orange juice, soy sauce, honey, garlic powder, and ginger powder. Whisk together until well blended.
- In a separate bowl, mix cornstarch with a small amount of water to create a slurry. Add this to the orange juice mixture.
- Heat olive oil in a pan over medium heat. Add diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Pour the orange juice mixture over the chicken in the pan. Stir well to coat the chicken evenly.
- Bring the mixture to a simmer and cook for an additional 10 minutes, allowing the sauce to thicken.
- Remove from heat and serve the orange chicken over cooked rice, alongside steamed broccoli.
- Let cool before dividing into meal prep containers for storage.
