Description

Lemon Meringue Poke Cake is a delightful dessert that combines a tangy lemon flavor with a fluffy meringue topping.

Ingredients

Scale
  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 tub (8 oz) whipped topping
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix on medium speed for 2 minutes until well combined.
  3. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Poke holes throughout the cake using a fork or skewer.
  5. In a separate bowl, whisk together the sweetened condensed milk and lemon juice. Pour the mixture over the cooled cake, ensuring it seeps into the holes.
  6. Let the cake cool completely in the refrigerator for at least 2 hours.
  7. While the cake chills, prepare the meringue topping. In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form.
  8. Gradually add the granulated sugar, continuing to beat until stiff peaks form.
  9. Remove the chilled cake from the refrigerator and spread whipped topping over the top. Then, layer the meringue on top of the whipped topping.
  10. Use a kitchen torch to lightly brown the meringue or place it under the broiler for a few minutes, keeping a close watch to avoid burning.
  11. Slice and serve chilled. Enjoy your delicious Lemon Meringue Poke Cake!

Notes

  • Ensure to watch the meringue closely when browning to avoid burning it.
